slices JENNIE-O® Turkey Bacon
cups cubed butternut squash
teaspoon olive oil
tablespoon maple syrup
(1-pound) package prepared gnocchi, cooked according to package directions
cup basil pesto
grated Parmesan cheese, if desired
Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.
Toss squash, rosemary, oil and syrup on baking sheet.
Roast 45 minutes or until squash is golden and tender, stirring occasionally.
In large bowl, toss roasted squash, gnocchi, bacon and pesto until combined.
Sprinkle with cheese, if desired.
