tablespoons olive oil
tablespoons lemon juice
garlic clove, minced
teaspoon crushed red pepper
slices JENNIE-O® Turkey Bacon
zucchini, sliced lengthways
cups whole wheat pasta, cooked as specified on the package
cup chopped roasted red bell pepper
tablespoons chopped fresh basil
cup crumbled feta cheese
In jar with lid, add oil, lemon juice, honey, garlic and red pepper. Shake until well combined. Set aside.
Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. Set aside.
Prepare grill for medium-high heat. Spray grill with cooking spray. Grill zucchini slices about 2 minutes per side or until grill marks appear.
Cut zucchini into 1-inch pieces. In large bowl, toss zucchini, pasta, bacon, bell pepper, olives and basil. Sprinkle with cheese.
Drizzle dressing over salad; toss to coat.
