tablespoon vegetable oil
cup chopped onion
cup diced celery
tablespoons shredded carrots
tablespoon curry powder
teaspoons granulated garlic
teaspoon black pepper
(16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
cups long grain brown rice
ounces reduced sodium chicken broth
Heat oven to 375°F.
In pan, heat oil and sauté onion, celery and carrots until tender. Add curry, garlic and pepper; mix well.
In 9 x 13-inch baking pan combine vegetable mixture, ground turkey, rice and chicken broth; stir well. Cover with foil and bake 1 hour 30 minutes stirring half way through.
Remove from oven when rice is tender and turkey is well-done, 165°F. as measured by a meat thermometer.
