large sweet potatoes
teaspoon kosher salt
slices JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt
(8-ounce) package WHOLLY® SIMPLY AVOCADO® dip
poached eggs, kept warm, if desired
tablespoon smoked paprika or Aleppo pepper
Slice sweet potatoes into 6 ½-inch slices. Place on parchment paper-lined baking sheet or jellyroll pan in a single layer. Lightly spray with cooking spray and sprinkle with salt.
Bake 20 minutes, flipping half way through.
Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.
Top sweet potatoes slices with avocado, bacon slices, and poached egg. Sprinkle with smoked paprika.
