Looking to spice up brunch? Try this carb-conscious Mexican Turkey Sausage Strata — eggs, turkey sausage and smoky chipotle adobo sauce baked over corn tortillas. Under 300 calories per serving!
(16-ounce) package JENNIE-O® All Natural* Turkey Sausage
cup egg substitute or 4 eggs
canned chipotle chile in adobo sauce, finely chopped, plus 1 tablespoon adobo sauce
cup finely sliced green onion
sour cream and cilantro leaves, if desired
Heat oven to 350°F.
Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
Layer tortillas in baking dish. Sprinkle cooked and crumbled turkey over tortillas.
In medium bowl, whisk eggs. Stir in milk, chipotle chile, adobo sauce and green onion. Stir in ½ cup cheese. Pour over tortillas.
Bake 25 minutes or until set.
Sprinkle with remaining cheese.
Bake 5 minutes or until cheese is melted.
Top with salsa, sour cream and cilantro leaves, if desired.
