Pasta, fresh veggies and turkey come together in this lean take on the classic Waldorf Turkey Pasta Salad. Perfect for a picnic, barbeque, or light brunch.
(7-ounce) package small shell pasta
cup plain yogurt
cup fat-free mayonnaise
tablespoons frozen orange juice concentrate, thawed
teaspoon chicken flavored bouillon granules
cups cubed JENNIE-O® Oven Roasted Turkey Breast
cup sliced celery
cup halved grapes
cup chopped parsley
cup chopped walnuts, toasted
Cook pasta according to package; drain and rinse under cold water. Drain well.
In small bowl, combine yogurt, mayonnaise, orange juice and bouillon granules; mix well. In large bowl, combine pasta, cubed turkey breast, apple, celery, grapes and parsley.
Add dressing; toss to coat. Sprinkle with walnuts. Chill until ready to serve.
