(16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
small white onion, diced
cloves garlic, minced
(32-ounce) can low-sodium chicken broth
(15.5-ounce) cans white beans, rinsed and drained
(29-ounce) can hominy
Serrano peppers, minced
teaspoon ground cumin
teaspoon ground coriander
teaspoon ground white pepper
cup heavy cream
cup shredded mozzarella cheese
cilantro, if desired
Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.
Add onion and garlic; cook 5 minutes or until onion is softened, stirring occasionally.
Add chicken broth, white beans, hominy, peppers, cumin, coriander, salt and white pepper. Bring to boil; reduce heat to medium. Simmer 15 minutes. Stir in cream.
Serve topped with cheese and garnish with cilantro, if desired.
