Ingredients

  • 1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
  • 3 tablespoons minced fresh thyme, divided
  • 2½ teaspoons minced fresh sage, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon course ground pepper
  • 1½ teaspoons olive oil
  • ¾ cup chopped red onion
  • 1¾ cups chopped green bell pepper
  • ¾ cup coarsely chopped celery
  • 3 tablespoons minced garlic
  • 2 (10¾-ounce) cans reduced-sodium tomato soup
  • 1½ cups brown rice
  • 2 cups water

Directions

  1. Cook turkey as specifed on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. In medium bowl, combine turkey breast, 1½ tablespoons thyme, 1¼ teaspoons sage, garlic powder, salt and pepper. Heat oil in large, non-stick soup pot over medium heat. Add onion, bell pepper, celery and garlic. Cook, stirring occasionally, 5 to 7 minutes or until onion is softened; increase heat to medium-high.
  3. Add turkey mixture, tomato soup, rice, water and remaining thyme and sage. Stir to combine. Bring to boil. Reduce heat to medium-low. Simmer, covered, stirring occasionally, 20 minutes or until hot.
