Roast Turkey with Herb Potatoes

Ingredients

  • 2 to 3 pound JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast
  • CRUNCHY WEDGES
  • 8 to 12 medium red potatoes
  • 1½ tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh chives
  • BRANDY GRAVY
  • 1 gravy packet from turkey
  • ¼ cup brandy
  • ½ cup orange juice
  • ¼ teaspoon pepper

Directions

  1. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Serve with crunchy wedges and brandy gravy.
  2. To make wedges, cut potatoes in half, cut each half into 3 wedges. In mixing bowl, toss wedges with oil, rosemary and thyme. Arrange in single layer on baking sheets. Bake at 375°F. turning once during cooking, 45 to 50 minutes or until wedges are golden-brown and crunchy. Sprinkle with chives; toss to coat.
  3. To make gravy, combine the gravy and brandy in medium saucepan. Bring to boil, reduce to medium-low. Simmer, uncovered, 5 minutes. Add orange juice and pepper. Simmer, uncovered, 5 to 10 minutes or until thickened.
