Easy Turkey Cupcakes

Love lasagna but don’t love all the noodles? This kid-friendly Italian recipe is your noodle-free dream come true. Made with fresh basil, melted mozzarella and ground turkey, it’s under 300 calories per serving!

Ingredients

  • ½ (16-ounce) package JENNIE-O® Ground Turkey Roll
  • 1 cup pizza sauce
  • 3 tablespoons chopped fresh basil
  • ¼ teaspoon freshly ground pepper
  • 18 wonton wrappers
  • 1 cup shredded pizza cheese
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese

Directions

  1. Heat oven to 350°F. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add pizza sauce, basil and pepper. Simmer 5 to 10 minutes or until thickened.
  2. Cut circles from wonton wrappers to fit muffin pan. Place round of wonton in the bottom of 6 muffin cups.
  3. In small bowl, combine cheeses. Spread cheese mixture on wonton wrapper and add turkey mixture. Repeat with layers twice. Cover with wonton wrapper. Sprinkle with cheese mixture.
  4. Bake 20 minutes or until edges are brown. Let cool for 5 minutes. Run knife around edge of each lasagna cupcake before removing.
