Ingredients

  • ½ cup thinly sliced red onion
  • ¼ cup lime juice
  • 2 teaspoons canola oil
  • 2 teaspoons finely grated ginger
  • 4 garlic cloves, minced
  • 2½ cups shredded leftover JENNIE-O® OVEN READY™ Turkey
  • 3 tablespoons chopped fresh mint
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon HOUSE OF TSANG® hoisin sauce
  • 1 tablespoon fish sauce
  • ¾ cup coarsely shredded carrot
  • 8 large butter lettuce leaves
  • ¼ cup peanuts, toasted and coarsely chopped

Directions

  1. In small bowl, combine onion and lime juice; let stand 15 minutes.
  2. Heat large, non-stick skillet over medium-high heat. Add oil, ginger and garlic. Cook 1 minute or until fragrant. Remove skillet from heat.
  3. In large bowl, combine onion mixture, turkey, mint, cilantro, sauces and carrot.
  4. Spoon turkey mixture into each lettuce leaf and sprinkle with peanuts.
