Ingredients

  • 1 (16-ounce) package JENNIE-O® Extra Lean Seasoned White Turkey Patties
  • 4 slices JENNIE-O® Turkey Bacon, halved
  • 1 cup diced tomatoes
  • ½ teaspoon chopped fresh chives
  • ¼ teaspoon chopped fresh thyme leaves
  • ¼ teaspoon chopped fresh basil leaves
  • 6 leaves torn romaine lettuce
  • 1 tablespoon olive oil
  • 1 tablespoon fat-free mayonnaise
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons garlic butter
  • 8 slices Texas toast

Directions

  1. Cook turkey patties as specified on the package. Always cook to well done,165°F as measured by a meat thermometer.
  2. In medium skillet, heat tomatoes, chives, thyme and basil over medium heat 5 to 10 minutes or until tomatoes are cooked, stirring occasionally.
  3. In food processor, place lettuce, oil, mayonnaise and Parmesan cheese. Process until smooth.
  4. Spread garlic butter on each side of bread. On hot griddle pan, cook bread 1 to 2 minutes on each side or until golden brown.
  5. Spread lettuce pesto on one side of each slice of toast. Top toast slices with turkey patties, bacon and tomato mixture. Add remaining toast slices.
