cups split peas
medium potato, peeled and cubed
ribs celery, chopped
large onion, chopped
medium carrot, peeled and chopped
ounces JENNIE-O® DELI FAVORITES® Hickory Smoked Turkey Breast, from the service deli, cubed
teaspoon salt, if desired
teaspoon freshly ground pepper
ounces baby spinach, chopped
In large saucepan, bring split peas and water to a boil. Reduce to a simmer and add potato, celery, onion, carrot, bay leaf and marjoram. Simmer 1 1/2 hours, stirring occasionally. Add water, if needed.
When peas are falling apart, add turkey, salt and pepper; stir.
Cook 10 minutes. Stir in spinach and simmer just until wilted.
