
Turkey Chorizo Breakfast Enchiladas

Ingredients
- 1 (16-ounce) package JENNIE-O® Chorizo Seasonings Turkey Sausage
- 8 eggs or 2 cups egg substitute
- 1½ tablespoons milk
- 8 ounces shredded Monterey Jack cheese, divided
- 8 (6-inch) whole grain tortillas
- 1 cup salsa verde
Directions
- Heat oven to 350°F.

Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
- Spray skillet, with non-stick cooking spray. Heat skillet over medium heat. In bowl, whisk eggs and milk. Add eggs to skillet. Cook scrambled eggs to soft stage. Stir in sausage crumbles and 3 ounces cheese.
- Spoon egg mixture onto each tortilla. Roll up tortilla and place in 8 x 8-inch baking pan. Add salsa verde to each tortilla. Sprinkle with remaining cheese. Bake 15 to 20 minutes or until cheese is melted.
