Ingredients

  • 6 slices JENNIE-O® Turkey Bacon, cut into pieces
  • ¼ cup diced red onion
  • 1½ cups sliced fresh mushrooms
  • 2 (10-ounce) packages fresh spinach (washed, dried and stems trimmed)
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 2 tablespoons cider vinegar

Directions

  1. Heat skillet over medium-high heat; spray with cooking spray. Cook bacon, onion and mushrooms 5 to 7 minutes or until bacon is crispy and vegetables are tender. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. Toss spinach, bacon, onion and mushrooms in bowl. In small bowl, whisk olive oil, sugar and vinegar. Drizzle dressing over salad; toss to coat.
