Ingredients

  • 4 slices JENNIE-O® Turkey Bacon, cooked, crumbled
  • 5 cups torn spinach leaves
  • 1 cup sliced fresh mushrooms
  • ½ cup thin red onion wedges
  • 2 hard-cooked eggs, chopped
  • ½ cup light Catalina dressing

Directions

  1. Cook turkey bacon as specified on the package; set aside. Always cook to well-done, 165°F as measured by a meat thermometer. In large bowl, combine spinach, mushrooms, onion, bacon pieces and eggs. Add dressing; toss.
