tablespoon olive oil
(1-pound) package JENNIE-O® All Natural* Turkey Sausage
small onion, chopped
medium sweet potato, peeled and chopped
small red bell pepper, chopped
small green bell pepper, chopped
jalapeño, seeded and sliced
teaspoon ground chili powder
teaspoon ground cumin
teaspoon smoked paprika
teaspoon kosher salt, if desired
medium eggs, if desired
cup chopped fresh cilantro leaves
Heat oven to 400°F.
In large cast-iron skillet, heat oil over medium heat.
Place ½ inch thick patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer; crumble.
Add onion and sweet potato and cook 5 minutes.
Stir in bell peppers, jalapeño, chili powder, cumin, paprika and salt, if desired.
Make 6 wells and pour eggs into wells, if desired.
Remove from heat.
Bake 20 minutes or until egg whites are set and yolk is cooked to desired degree of doneness.
Sprinkle with cilantro.
